Pasil to showcase traditional cuisine for ‘Mangan Taku Festival 2022’ in Baguio City

Pasil, Kalinga – The Municipality of Pasil under the leadership of Mayor Alfredo ‘Chao-ig’ Malannag Jr. will represent the Province of Kalinga in this year’s Mangan Taku Festival to be held from April 27 to 30, 2022 at the Wright Park Reflection Pool, in front of The Mansion, Baguio City.


What is ‘Mangan Taku’ Festival?

Mangan Taku, a general term in the Cordillera which means ‘let us eat,’ was institutionalized in the Summer Capital of the Philippines to boost culinary tourism in the Cordillera, showcasing local cuisines from all of the provinces in the region.


According to Department of Tourism – Cordillera Regional Director Jovita Ganongan, the event is in line with the Filipino Food Month.

Other than witnessing and tasting the display of local dishes, participants will also get to experience ‘Mountain Cook.’


“Meron tayong mga in-identify diyan na mga open areas where you can go travel with a chef, with a local chef or with a local cook para sila ang magluto sa mga stops, mga camping site, mga peak stops of the travel so matitikman mo, matututunan mo rin kung paano lutuin ito at yung history (at origin) din,” says Ganongan through PTV-Cordillera.


Pasil to feature ‘Inanchila’ and Slow Food dishes

Pasil Administrator Milagros Batalao and Agriculture Extension Worker Rowena Gonnay said the municipality will highlight the ‘inanchila,’ a famous local delicacy which was previously chosen by Ark of Taste of Slow Food International, presenting it in Italy.


Other ‘Slow Food’ dishes or delicacies that will be cooked from locally grown crops, without using food chemicals or commercially produce ingredients will be displayed in the municipality's booth.

Gonnay explained that by featuring the ‘inanchila,’ the indigenous Kalinga snack may be passed to the younger generation thus, it’s preservation.


Also, the Agriculture Extension Worker desires that the production of heirloom rice varieties such as ‘Lapoy, Walay, Ifuwan, and Alig’ be preserved.

The Municipal Mayor and Gonnay, along with other officials are inviting the public to support their products that will be displayed at said festival.


“Hello Cordillerans, mark the date from April 27 to 30 for the Mangan Tako Festival. The Pasil Slow Food Community will be there. Come and taste the authentic Food of Indigenous people specially INANCHILA from Pasil,” calls Gonnay.
