DOST-Kalinga offers free acidity testing of vinegar products

Tabuk City, Kalinga― Local Grants in Aid (LGIA) project of Department of Science and Technology-CAR through Provincial Science and Technology Center-Kalinga (PSTC-Kalinga) in partnership with Kalinga State University (KSU) offers Free Testing of the percentage of acidity of vinegars processed in the province.


As vinegar is a common household need, yKalingas have been producing different kinds of vinegar made from different kinds of fruits.


There are also vinegars with chili with yKalingas being known for their preference for food with chili.


The project mainly aims to ensure that the vinegars being sold meet the minimum required Food and Drug Administration (FDA) standard acidity of 4% which will be tested for free by KSU and the Integrated Chemists of the Philippines-CAR Cluster.

Based on the FDA standards, the two (2) minimum requirements to be tested for vinegar are acidity and permanganate oxidation number (PON) (BFAD AO No. 134 s. 1970 and MO No. 1 s. 1985) to determine whether glacial acetic acid was used which is prohibited in vinegars.


Said project further intends to analyze all submitted vinegar samples as well as recommend appropriate action to each processor, continue process if it meets the standard or reformulate and/or lengthen the fermentation process if not.


The results of the project are to serve as baseline data for government agencies for the inclusion of appropriate activities in their livelihood projects.


As of now, there are already 13 samples collected submitted by 7 different firms.

PSTC-Kalinga is still accepting at least 250ml of vinegar samples at the PSTC-Kalinga, Purok 6, Hilltop, Bulanao, Tabuk City from December 15-18, 21-22, 8:00AM to 5:00PM


The following data need to be provided and better if it is already written on paper so that the vinegar sample may only be dropped at the said office and shorten the duration of face to face contact: Name of vinegar processor; gender; age; PWD; firm/organization; firm/orgnization address; mobile no.; vinegar description; data processed; and sample submitted by.
